Eggplant Parmajohnson©

-whole eggplant
-1/2 cup each chopped:
mushrooms, red peppas, yella peppas, green peppas, onions, ‘sparagus
-2 cups spinach (remove stems)
-1/2 cup breadcrumbs
-1/2 cup cottage cheese
-1 egg
-1/8 cup milk
-1lb fresh mozzerella cheese
-2 cloves of gerlic, chopped
-2 cups crushed tomatoes in sauce
-2 ‘sparagus stalks
-4 tablespoons of olive erl
-sliced tomato
-spices

startin wit the chopped onions, cook em till they simmerin in the olive erl in a
large pan. when they start to simmer in they own stuff, throw in all them
chopped vegables an add some spices to yo liking such as cayenne peppa,
paprika, crushed red peppa, etc, an let em cook till they soft. you now got
yoseff some delicious veggie johnsons!ä put in about ½ cup of the spinach.
spice it up, baby. add the gerlic and when it start to liquify, stir in the crushed
tomatoes.
preheat the oven to 350 degrees. cut the top off the eggplant then slice it
down the middle. carve out the inside an remove all that seeded urrea so
each half look kinda like a boat. (that’s the eggplant boat). while the veggies
is simmerin, start makin a batta so you can bread the eggplant. break the
only egg that you got into a bowl an pour in some milk an mix it up. cover
the 2 half eggplants in the egg batta. the batta is egg but it ain’t a plant-do
not get cornfused. put the egg covered eggplant into a zip-lock bag an pour in
the breadcrumbs. shake it like you ain’t never shook nuthin before—go ‘head,
shake yo johnson-make sure it all get covered wit the breadcrumbs. throw
some mo olive erl into a pan on some medium-high heat an lightly fry them
eggplant halfs all over. when they nice an crispy, put them in a pyrex dish an
fill the very bottom of the eggplant boats wit some of that veggie johnson wit
tomato sauce mixture. cover that wit cottage cheese. add more mixture.
then cover the entire top of the eggplant boats wit mozzarella slices. garnish
wit sliced tomatoes on the top. fill out the ress of the dish with the ress of the
spinach an all remaining veggie mixture. bake in oven for 25 minutes. ok.
